Sunday is family day so it’s time to prepare something special and delicious. This juicy, aromatic and crispy chicken with roasted vegetables is a great idea for a tasty lunch or an elegant dinner. A simple and easy dish to prepare, and the taste will satisfy every taste bud 🙂


1 whole chicken weighing 1.5 – 2 kg
half lemon, cut into 4 parts and nailed
1 large carrot, cut in half lengthwise
1 small onion, cut into quarters
2 sprigs of parsley
2 sprigs of rosemary
1 red pepper, quartered, without a nest
1 yellow pepper, quartered, without a nest
1 kg of small potatoes, cooked with skin
1 teaspoon of oregano
1 teaspoon of sweet chili pepper
1 teaspoon tarragon (if you don’t have tarragon you can use oregano)
pinch of salt
1 teaspoon of freshly ground pepper
30 g of melted butter
1 tablespoon of olive oil


In a small bowl, combine sweet paprika, tarragon, salt, and pepper. Take the chicken out of the refrigerator to bring it to room temperature. Wash it, dry it, you can cut off the neck and excess fat. Preheat the oven to 180ºC (top – bottom). Rub the chicken with the spice mixture (also inside). Put onions, rosemary, parsley, lemon in it and close it with a toothpick (or toothpicks). Using a brush, brush the chicken with melted butter. Place the carrots on the bottom of the baking dish. Place the chicken on its side on the carrot, make sure the chicken touches the pan as little as possible. Bake for 25 minutes, then turn over and bake again for 25 minutes. After this time, place the chicken breast side up on the carrot. Water it with its melted fat. Bake for 10 minutes. Meanwhile, cook the potatoes in a boiling water for 10 minutes. Drain and place into a big bowl. Add cutted peppers, pinch of salt, pinch of pepper and oregano.Mix. Add peppers and cooked potatoes to an ovenproof dish with chicken. Bake together for 30 minutes. After removing from the oven, wait 15 minutes for the chicken to be cut, so that the juices in the chicken settle down (you can cover it with aluminum foil so that it does not cool down).
