It is a traditional Polish soup, where the main ingredients are barley groats, potatoes and carrots, prepared in chicken or vegetable stock. This time I will show you a delicious chicken broth soup,  which the preparation is simple and the final taste is breathtaking. This soup has become a permanent feature of my home menu 🙂

Ingredients:

2 quarters of chicken, washed
8 tablespoons of barley groats
½ kg of potatoes, peeled and cut into large cubes
1 small parsley, peeled and diced
1 medium carrot, peeled and diced
1 small onion, peeled
2 tablespoons of chopped dill
1 tablespoon of green parsley, chopped
½ teaspoon of salt
½ teaspoon of pepper
1 bay leaf
2 allspice
2 liters of water

Procedure:

Put the chicken, onion, allspice and bay leaf in a large pot. Pour everything over with water, cover the pot and bring to a boil. Simmer for over an hour until the meat comes off the bones. Use a colander to extract any spices, onions and meat. When the chicken has cooled down, separate the meat from the skin and bones and put it back in the stock. You can throw in the skin too, but I prefer the meat only version. Add potatoes, parsley, carrot and groats to the broth. Add salt and pepper, bring the broth to a boil, then simmer, covered, for half an hour. After this time, add the dill and cook for another 5 minutes. Check the taste of the soup and possibly season with salt and pepper. Serve with chopped parsley 🙂
