The most popular soup in Poland. Mostly serve for a family gathering or at Sunday lunch in Polish tables. When I cooking this dish, it reminds my husband of his childhood. It was when after church and his Mom preparing their lunch. The smell of the soup makes him feel that he is really in home. Our little Ola loves this soup and eats that her ears are shaking. This dish literally makes itself, you just have to wait patiently 🙂

Ingredients:

1 quarter chicken (or broth portion)
3 pork ribs (can be omitted, but add extra flavor)
2 carrots
1 parsley
a piece of celery
onion
small size leek
fresh parsley
1 tsp salt
2 allspice balls
4 peppercorns
2 bay leaves
2 liters of water

Preparation:

Wash chicken and ribs and put in a large pot. Pour the meat with water, add salt and bring to a boil over medium heat. When the food begins to cook, reduce the heat and remove the scum. Cook the broth over a lower heat for 1 and a half hour. During this time, prepare the vegetables, rinse them. Peel carrots, parsley and celery. Onions should burnt (if you do not have fire, you can do it in a hot pan without oil). Add all vegetables and the rest of the spices to the pot and continue to cook on low heat for 1 and half hour. Season with freshly ground pepper and salt. Serve with noodle or pasta, a piece of fresh parsley, chopped carrot broth and meat with soup.
