Butternut squash is a great vegetable to stuff. The stuffing was prepared with vegetables and sausages that combine well with each other and create a tasty dish. The preparation is simple, it takes about an hour, and the dish looks really beautiful and tastes great 🙂

Ingredients:

1 medium butternut squash
250 g kielbasa, cubed
1 medium onion, finely chopped
2 garlic cloves, minced
1 medium zucchini, cubed
1 small red bell pepper, cubed
½ cup yellow cheese
pepper flakes (optional)
fresh chopped parsley for garnish

Procedure:

Preheat the oven for 180°C. Cut the squash lengthwise in half. Discard the seeds. Cover each bottom of squash with aluminum foil. Place into the oven and bake for 25-30 minutes. Remove from the oven and let it cool slightly. Meanwhile, in a large pan, cook the sausage over a medium heat for 5-6 minutes or until lightly brown. Add the onion and the garlic and stir until the onion turns into a glassy color. Add the bell pepper and zucchini and cook for 5-6 minutes or until the vegetables soften. Scoop flesh from squash and stir into the sausage and vegetables, leaving ½ thick. Sprinkle with pepper flakes if desired or you can skip if you don’t want it to be spicy. Fill the squash with sausage and vegetables mixture. Sprinkle it with cheese. Bake into the oven for 15-20 minutes more and until the cheese is melted. Sprinkle with fresh chopped parsley 🙂
