The berry season is in full swing, so make the most of it this time. A simple recipe for delicious blueberry muffins is a very nice option for a warm summer afternoon. The whole family will love the soft, delicious, moist blueberry muffins 🙂


1 ½ cups flour
2 teaspoon baking powder
¾ cup granulated sugar
½ teaspoon salt
½ cup milk
⅓ cup oil
1 egg
1 teaspoon vanilla extract
1 cup fresh blueberries


Preheat oven to 200ºC. Place 10 paper muffin cups individually into a muffin tray. In a big mixing bowl, sift in the flour, baking powder, sugar and salt. Mix to combine using a fork. Pour in oil, egg and vanilla. Mix well. Add milk and slowly mix to combine and until thickens (do not over mix). Fold in the blueberries into the batter. Transfer and divide the batter into each muffin cups. Sprinkle with sugar. Place into the oven and bake for 15-20 minutes. Transfer into a cooling rack. Serve.
