Breakfast is a very important meal because it gives us energy for the whole day. And this time, I prepare a simple and energy booster meal with chanterelle mushrooms. I like this Scrambled eggs with chanterelle mushrooms because it’s tasty, quick, simple and very healthy. Chanterelle are just seasonal mushrooms, but frozen ones are also great for this meal πŸ™‚

Ingredients:

5 eggs
200 g of chanterelle mushrooms
2 tablespoons of butter
spoon of chopped chives
pinch of salt
1/4 teaspoon of pepper

Preparation:

Wash the chanterelle mushrooms, dry them and if necessary cut them into smaller pieces. Melt the butter in a pan and fry the chanterelle for about 7-8 minutes. Add pepper, salt and chives. Stir and fry together for 1 minute. Beat the eggs into a bowl until they are homogeneous (you can also add them directly to the pan and mix them while frying). Add the eggs to the pan and fry until the eggs are set. Serve with bread πŸ™‚
