Delicious, healthy, crisp bars, which are great as a snack, or as a reserve energy source in a lunchbox during mountain treks. Available ingredients and easy procedure makes it worth to prepare such a snack during trips out of the house or as snack at work 🙂

Ingredients:

1 cup old-fashioned oats
¼ cup wheat flour
¼ cup granulated sugar
pinch of baking soda
pinch of salt
3 tablespoon butter, melted
1 cup fresh blueberries
3 tablespoon maple syrup
1 teaspoon potato flour
½ teaspoon lemon juice
50 g semi-sweet dark chocolate, melted

Procedure:

Preheat oven to 180ºC and grease by butter an 4 inches square baking tin. In a large bowl, mix together oats, flour, sugar,baking soda and salt. Add melted butter. Stir to combine and until it forms into a whole crumbs. Transfer into prepared baking tin (separate a ¼ cup of crumbs for toppings). Press the crumbs evenly. Place into the oven and bake for 10 minutes.
Set aside and allow it to cool. In a small saucepan over a medium heat, combine blueberries, maple syrup, potato flour and lemon juice. Stir until flour has completely dissolved. Simmer, stirring occasionally until it thicken. Pour in the blueberry mixture into the crust and spread. Top with left crumble. Return to the oven. Bake for another 20 minutes. Allow to cool. Drizzle with melted chocolate and slice.
