The pumpkin season is still on, so it’s worth using this vegetable in various ways. Pumpkin has a lot of sweets uses, previously I showed you pumpkin flan and this time with a delicious, chewy, sweet cookie. A tasty and simple pastry recipe with the addition of tasty pumpkin and white chocolates 🙂

Ingredients:

½ cup butter, softened
¼ cup white sugar
¼ cup brown sugar
½ cup pumpkin puree
¼ teaspoon salt
1 teaspoon pumpkin spice
½ teaspoon cinnamon powder
1 ½ cups flour
½ teaspoon baking soda
200 g white chocolate, chunked
white sugar to flatten the cookies

Procedure:

Cream together the butter and sugars in a medium size of bowl. Add the pumpkin puree, salt, pumpkin spice, cinnamon powder and mix well. Sift in flour and baking soda and mix until well combined. Fold in the white chocolate chunks and reserve some for the toppings. Scoop the batter into a baking tray lined with baking paper. Slightly flatten the dough using a glass dipped into sugar. Top with reserved white chocolate chunks. Bake at 190°C for 8-9 minutes. Remove from the oven and allow to cool. Best serve with milk.
