Paella is a traditional Spanish dish based mainly on rice and seafood, but is also often found with chicken, rabbit or pork which is common and can easily be found in shops. This time I present to you a slightly changed version with chicken and chorizo sausage, where the intense aroma and taste will please everyone 🙂

Ingredients:

4 tablespoons olive oil
1 large onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
500 g chicken breast, cubed
100 g chorizo spicy, sliced
250 g paella spanish rice
4 cups chicken broth
1 paella seasoning
1 can diced tomatoes
1 cup frozen green peas
a handful fresh parsley, chopped
salt and pepper
lemon wedges (optional)

Procedure:

Heat 2 tablespoons of oil in a large skillet over medium heat. Saute onion and pepper for 8 minutes or until softened. Add garlic and cook for 1-2 minutes. Set aside. In the same pan, add the remaining oil. Add chicken. Cook, stirring occasionally on each side until slightly cooked. Add chorizo and cook for 5 minutes. Remove from the pan and set aside. Add the rice in the same pan. Cook to toast stirring occasionally for about 2-3 minutes. Add 1 pack of paella seasoning into the prepared chicken broth. Stir to combine. Add the chicken broth with seasoning into the rice. Mix. Add back the cooked chicken with sauteed onion and bell pepper into the pan. Add tomatoes. Mix. Lower the heat and simmer for about 15-20 minutes when the rice is soft or the liquid has absorbed. You can add more broth if necessary. Add peas and parsley. Mix to combine and cook for another 3 minutes. Season with salt and pepper. Serve with lemon wedges and chopped parsley if desired 🙂
