Pares are an extremely delicious dish that is very popular in the Philippines, both in restaurants and street food. Commonly refers to beef or pork pares. A braised pork stew served with garlic fried rice and a bowl of soup. The meat melts in your mouth and the sauce perfectly matches the taste of the ingredients. Ribs are a perfect addition to this type of dish because the meat is delicious and the bones give the sauce a great flavor 🙂

Ingredients:

1 kilo pork ribs (1 rack)
4 cloves of garlic, minced
1 big red onion, cubed, divide into three
3-5 pieces of pepper balls
2 pieces of bay leaves
thumb of ginger, sliced
2 tablespoons dark soy sauce
3 pieces of star anise
brown sugar, to taste
salt and pepper to taste
oil for cooking
fried garlic
sesame seeds, toasted (optional)
onion grass for garnish

Procedure:

Wash the ribs thoroughly and dry it with a paper towel. Slice in between the bones to cut the racks into individual ribs. In a large bowl combine, 2 cloves of garlic, one part of onion, soy sauce, salt and pepper. Add the sliced ribs and massage meat to fully incorporate. Marinate in the refrigerator for at least 4 hours or overnight for best results. Boil the marinated meat into a pot with another part of onion, pepper balls and bay leaves for 30-45 minutes or until it has softened. Do not over cook. Remove the meat from the pot and set aside. Do not throw the broth. Heat oil in a large pan over medium heat. Saute ginger until golden brown. Stir in garlic and left onion and fry until onion turns into glassy. Add the meat and stir in for 5 minutes. Add a cup of broth, soy sauce and star anise. Simmer in a low heat for 10-15 minutes. Make sure to leave a little water for the sauce. Add sugar, salt and pepper to taste. Sprinkle with toasted sesame seeds or fried garlic and onion grass. Serve with garlic fried rice and soup 🙂
