Cucumber soup is not popular in the Philippines, so I was quite surprised that it is a traditional dish in Poland. I ate this soup for the first time in my sister in-law’s house and I immediately fell in love with it. This dish is a bit laborious, but still easy to prepare. The end result knocks you off your feet, so I highly recommend it 🙂

Ingredients:

700 g of ribs, cut into smaller pieces (2-3 bones each)
1 chicken leg
2 ½ liters of cold water
2 medium carrots, grated
2 small parsley, diced
1 piece of leek
1 onion, diced
1/4 of celery, diced
6-7 medium-sized pickled cucumbers, grated
5 potatoes, cut into large cubes
4 tbsp cream 30%
½ teaspoon of salt
½ tablespoon of freshly ground pepper
1 tablespoon of dried lovage
1 tablespoon of vegeta or simply universal seasoning
1 tablespoon of oil

Procedure:

Place the ribs and the leg into a pot and pour cold water, add salt and bring to a simmer. Get rid of the scum and add the leek, parsley, carrots and celery. In a frying pan, fry the onion until the glass color and add to the soup. Add the lovage, vegeta and pepper. Stir and simmer, covered, for an hour. After this time, add the potatoes and cook for 15 minutes until the potatoes are tender. Next, add the cucumbers and bring the soup to a boil. Cook together for 5 minutes. Add cream and bring it to a boil again. If necessary, season the soup to taste. If you want a slightly sour soup, you can add more cucumbers or cucumber marinade 🙂
