A warming cheese soup is a perfect idea for cold days. The expressive taste of cheese and crispy croutons are a perfect combination, this dish also tastes great with pasta. Simple preparation, a few ingredients, an unearthly taste, and this dish looks delicious and quickly disappears from the plate 🙂

Ingredients:

100 g of processed cheese
60 g cheddar cheese, cut into smaller pieces
60 g of crushed blue cheese
600 ml of broth (it can also be broth from last day)
2 onions, blended (or very finely chopped)
4 garlic cloves, finely chopped
1 tablespoon of butter
half a teaspoon of pepper
a pinch of rosemary
1 ½ tablespoon of chives, finely chopped

Procedure:

In a large pot, melt the butter. Add the onion and cook over low heat until the onion is soft and glassy for about 10 minutes. Be careful not to fry the onion until it is brown because it will be bitter. After this time, add the garlic and simmer for another 5 minutes. Pour everything over with hot broth and bring to boil. Add cheddar and blue cheese and melt with occasional stirring. Add pepper, rosemary and chives, mix. Finally, add the melted cheese and simmer until the cheese is completely melted. After this time, try the soup and season it if necessary (I did not add salt because the cheeses are salty, but you can add to taste). Serve with croutons fried in olive oil 🙂
