A delicious and easy cake recipe for winter where the tangerines are juiciest. A loaf cake baked with the fresh flavor of tangerine with sweet and fruity tangerine glazed. Simple and festive cake perfect for your tea time 🙂


For the Cake:

190 g flour
1 teaspoon baking powder
130 g sugar
½ teaspoon salt
3 large eggs
150 g butter
1 teaspoon tangerine zest
⅓ cup fresh tangerine juice
1 tablespoon honey
50 g walnuts, roughly chopped

For the glaze:

2 tablespoons powdered sugar
2 tablespoon tangerine juice


Preheat the oven to 200ºC. Grease your loaf pan and sprinkle a thin coating of sugar inside ( this will help to create a crunchy texture on the outside). Melt the butter in a small saucepan over low heat. Once melted, set aside to cool down. In a mixing bowl, sift the flour, baking powder, sugar and salt and mix together. Create a well in the middle and add in the eggs one at a time and whisk until well incorporated. Mix-in the melted butter, zest, juice and honey until the batter is smooth and shiny. Finally, mix in the chopped walnuts. Pour the batter in the prepared pan and bake for 40-45 minutes, until the cake is golden. Let the cake cool down for a few minutes and remove from the pan while it is still hot. Place the cake into the cooling rack. For the glaze, whisk together the powdered sugar and tangerine juice, pour over the cooled cake, slice and serve 🙂
