A quick and simple rhubarb cake is a great idea for various occasions or a dessert for afternoon tea. The cake comes out sweet, fluffy and light and the rhubarb adds a nice acidity that perfectly highlights the taste. The aroma stimulates the appetite of all household members, so this treat disappears very quickly 🙂


200 g rhubarb, cubed
100 g sugar
3 eggs
200 g flour
75 ml oil
1 pack of vanilla sugar
half a teaspoon of baking powder
powdered sugar for sprinkling


Separate the egg whites and place in a bowl. Whip to stiff foam. At the end of whipping, add sugar and mix until the sugar has dissolved. Add yolks, flour, baking powder and by using a spatula, gently mix everything so that the dough will remain fluffy. Finally, pour in the oil and also slowly combine all the ingredients. Add rhubarb and stir gently again. Put brown baking paper on a baking tray and pour the mass. Put in the oven preheated to 170ºC for 40 minutes. After baking, cool and sprinkle with powdered sugar.
