Hot days have come, so we must be prepared. Strawberry ice cream dessert is a great option for a tasty use of strawberries during warm days, and chocolate pieces will perfectly highlight the taste of this dessert and to be the heat of summer.
200 g 30% cream
200 g strawberries
250 g mascarpone or cream cheese
7-10 savoiardi biscuits or ladyfinger biscuits
2 egg whites
90 g sugar
40 ml water
crushed dark chocolate
Cut the strawberries into smaller pieces, add to the cream and set aside in the fridge for a few hours (preferably overnight). Strain with a strainer, knead the remaining strawberries with a fork. In a saucepan, mix water and sugar and bring to a boil to make a syrup. Beat the egg whites and slowly add the hot syrup while mixing. Add mascarpone and mix again to a homogeneous mass. Add crushed strawberries and mix again. Whip the cream with strawberry with a stiff cream and add to the mass, gently mix all together with a spoon. Pour the mass into the mold and put into the freezer for half an hour. After this time, put the ladyfinger biscuits on top of the dessert. Put the dessert back in the freezer for a few hours until it freezes. Pull the dessert out of the mold so that the sponge cake is the basis of the dessert. Sprinkle with crushed chocolate.
