Pork Stew with Curry
Stews are served quite often during lunch because the preparation is simple, the stew cooks itself properly, and often tastes much better for the next day. There’s no difference with this version, where the dominant flavor is given by curry, but it does not overwhelm the flavors of other ingredients. A simple, delicious and nutritious stew for the whole family. It tastes great with potatoes, groats, rice, noodles or bread. A perfect dish for the whole family 🙂
Ingredients:
1 kg of pork neck, cubed
1 medium carrot, cut into half slices
1 piece of leek (white part), diced
2 onions, diced
2 garlic cloves, minced
1 large red pepper, diced
3 pickled cucumbers, diced
150 g of diced bacon
2 tablespoons of curry
1 teaspoon of pepper
½ teaspoon of salt
2 teaspoons of sweet pepper
oil for frying
Procedure:
Mix the spices together and coat the pork neck thoroughly. Set aside for 10 minutes. After this time, fry the meat in batches until golden brown and put it into a pot. Pour hot water over the meat and simmer gently. In the same pan, fry the bacon until the fat is melted, saute the onion, garlic and leek. Add peppers and carrots and fry for 5 minutes. Transfer the contents of the pan to the pot with the meat. Add the cucumbers and cook, covered, for about an hour, until the meat is tender. At the end, season to taste with the recipe’s spices. You can thicken the stew with flour. Garnish with chopped parsley 🙂
