A traditional Filipino noodles dish that my husband loved while in the Philippines. This dish is always served during special occasion like birthdays, fiestas, Christmas and New Year. Its rice noodles symbolizes longevity and health 🙂

Ingredients:

500 g chicken breast (cut into 1 inch pieces)
200 g rice noodles
2 cloves garlic (minced)
1 onion (sliced)
200 g chinese cabbage (thinly sliced)
2 medium size carrots (thinly sliced)
90 g green beans
1 half red bell pepper (sliced)
¼ cup soy sauce (depending on taste)
1 cup bulion or chicken broth
salt and pepper
1 tbsp oil
onion chives
limes

Procedure:

Place the rice noodles in a bowl with a water and soak until they turn soft. When soft, drain and set aside. Heat the oil in a wok or in a large pan over medium heat. Stir fry garlic and onions. Add the chicken and cook. Add carrots, beans, soy sauce and stir-fry for 5-8 minutes. Add bell pepper, cabbage and broth. Cook until the vegetables are tender. Remove the vegetables from the pan to avoid over cooking and set aside. Slowly add the noodles into the pan and mix until the noodles absorb the liquid. Put back the vegetables and meat in the pan. Season with salt and pepper and carefully mix together. Transfer to a serving dish and garnish with onion chives and sprinkle with lime juice over it.
