Homemade Sausage Ricotta Ravioli
Ravioli is an Italian dish that usually contains ricotta cheese, meat and vegetables. They slightly resemble Polish dumplings, but the dough is more like pasta. This time, I decided to use a delicious Polish sausage for the filling, which perfectly emphasizes the taste of this dish. Elegant appearance, easy to make and great taste 🙂
Ingredients:
Filling:
250 g dried sausage of your choice, diced
250 g ricotta cheese
1 tablespoon of dried basil
½ teaspoon freshly ground pepper
1 large egg
Pasta:
2 cups flour
2 whole eggs
1 egg yolk
2 tablespoons olive oil
½ teaspoon salt
Procedure:
Filling:
Fry the sausage in a heavy bottom pan over medium-high heat for 15 minutes or until browned and crumbly. Let it cool. Pulse the slightly cooled sausage with the ricotta cheese, basil and egg using a food processor. To make the sausage into small crumbs and make it to be fully mixed without completely losing the texture of the sausage. Set aside.
Pasta:
Pour the flour into a flat surface and create a well in the flour. Add the eggs, yolk and olive oil. Combine all the pasta ingredients and knead together to make a stiff dough. You can also use a stand mixer with the dough hook on medium low speed for 10 minutes or until the dough is elastic. Wrap the dough with a plastic wrap and let it rest for at least 30 minutes. Place on a lightly floured surface and roll out to desired thickness.
Assembly:
Cut the pasta sheets into two equal parts. Place the prepared filling in one sheet using a small cookie scoop or about 1 teaspoon of filling and place in two to three rows down the strip depending on how big the pasta sheets. Lightly brush the dough with water between the filling and cover with the second sheet. Press the dough together around the filling to remove air. Using a cutter or a pastry wheel cut the pasta apart and press the sides using a fork. Boil water with a little salt into a pot and cook the pasta for 4-5 minutes. Serve with your favorite sauce, parmesan cheese and basil 🙂
