Christmas Devilled Eggs
When it comes to holidays, eggs are more associated with Easter, but they are also great for Christmas. The recipe is extremely simple and really delicious. Eggs are great as a snack, appetizer or as one of the dishes for the Christmas Eve table 🙂
Ingredients:
6 boiled eggs
2 tablespoon mayonnaise
1 tablespoon mustard
1 tablespoon fresh lemon juice
1 tablespoon mascarpone
½ teaspoon salt
½ teaspoon freshly ground black pepper
For garnish:
pomegranate seeds
sprigs of fresh rosemary
Procedure:
Make hard boiled eggs by boiling them on the stove in a large saucepan. Transfer eggs from the hot water using a slotted spoon into a large bowl, and immediately cover the eggs with cold water and ice. Peel the cooked, cool eggs, and slice them in half. Remove the yolk from the egg whites and place into the food processor. Process the yolk until it is creamy and fluffy with a smoother consistency. Add the mayonnaise, mustard, lemon juice, mascarpone, salt and pepper and continue to process until well blended. Place the filling into a pastry bag fitted with a large star tip. Pipe the filling into the egg shells by swirling it. Garnish with pomegranate seeds and tiny rosemary sprigs. Serve 🙂
