A dish which is originated in Mexico, great dish as a snack, lunch or even dinner. This version is enriched with many easily available ingredients that make the taste rich. Stuffing can easily be prepared in about 30 minutes, so this is a very fast version of burrito, perfect for a quick and tasty meal 🙂

Ingredients:

500 g minced pork
4 garlic cloves, chopped
400 g cut peeled tomatoes
1 can of red beans, drained
1 onion, diced
a handful of fresh coriander, chopped
1 lime washed thoroughly, scalded
3 teaspoons of spicy ajvar or chili pepper paste
a pinch of chili powder (you can add more if you like spicy)
salt and pepper
a teaspoon of sugar
oil for frying
6 pieces of tortilla wrap

Preparation:

In a deep frying pan, heat the oil and add one chopped garlic clove. Fry for a while, then add the meat. Season with salt, pepper and chili powder and fry, stirring until the meat is brown and water will be reduced. Transfer the meat to the bowl. Set aside. Heat the oil again in the same pan. Add one clove chopped garlic and chopped onion and fry together for a while. Add grated lime zest (you can add less, like half of the lime skin) and fry together for another 2 minutes. Pour over the chopped tomatoes (you can add some water so that you don’t waste anything from the can and burn the sauce). Add lime juice (you can add less if you are afraid of taste), sugar, pepper and salt to taste. Cook uncovered until the sauce is reduced by half and thick. After this time, add fried meat, beans, the rest of chopped garlic and chopped coriander. Mix everything and add ajvar. Mix again and fry together for a few minutes. If you see that the sauce contains water, then fry and stir until the water is reduced. If necessary, season to taste. Heat the tortilla wrap in a pan (without oil) for about 20 seconds to make it flexible. Line the stuffing and wrap. Serve with your favorite sauces 🙂
