What’s the best way to make the day and your loved ones pleasant? By baking delicious cookies. Delicious cookies with blackcurrant jam are a great sweet snack for both children and adults. A perfect addition to coffee and tea ๐Ÿ™‚


400 g flour
200 g butter
3 egg yolks
4 tablespoons sour cream, i used 18%
100 g powdered sugar
1 teaspoon vanilla extract
pinch of salt
black currant preserves
powdered sugar for dusting


Pour flour into a bowl, add the butter, egg yolk, cream, powdered sugar and a pinch of salt and mix with a mixer. Knead the dough into a pastry board. Divide the dough into two parts, cover with a plastic wrap and refrigerate for a night. I made the dough in the evening and baked it in the morning. Remove the dough from the fridge an hour before to soften. Roll out the dough into a floured parchment paper to a thickness of 2 mm. Use a big glass to make round flat disks (should be divided into pairs). Use a small glass to cut out of the centers of another pair of dough. Place the cookie an inch apart on a cookie sheet line with baking paper. Bake at a preheated oven to 190ยบC for 6-8 minutes or until the cookies are just beginning to lightly brown. Remove from the oven and let it cool. Once cool, spread a teaspoon of jam over whole cookies and top with cut-out cookies just like a sandwich. Dust with powdered sugar and serve ๐Ÿ™‚
