One of my favorite Polish dishes with many flavors and aromas, and also easy to make. Beans in tomato sauce with pieces of delicious meat is a really perfect mix for the taste buds. In addition, the dish is perfect for pasteurization and can survive in a jar for a long time without losing its taste, which is why this dish is very often prepared by Polish mums for children who study far from home 🙂

Ingredients:

500 g of Handsome Johnny beans
1 large onion, diced
2 garlic cloves, chopped
250 g steamed or smoked bacon, skinned and diced
400 g of sausage, diced
1 can of sliced tomatoes
a small jar of tomato paste (90 g)
3 tablespoons of dried marjoram
4 allspice
2 bay leaves
1 teaspoon of salt
salt and pepper to taste

Procedure:

Pour cold water over the beans, make sure to leave a few centimeters above the beans and soak for 8-12 hours. After this time, drain it, rinse it and put it into a large pot. Add 1 liter of cold water, salt, allspice, and bay leaves. Bring to a boil and simmer, covered for about 1½ hours. When the cooking time of beans is near, fry the bacon until golden and add to the beans, do not add fat. In the rendered fat, fry the sausage and onion together. At the end of frying, add the garlic and fry together for about 30 seconds. Add to the beans. Mix everything together and cook uncovered for about 7 minutes, stirring occasionally. Add canned tomatoes and tomato paste, season with salt, pepper and marjoram. Cook uncovered for 15-20 minutes, until the tomatoes fall apart. For me, beans taste best for the next day with simple, but extremely tasty bread 🙂

Enjoy!
