Souffle Pancake
Pancakes are really cool, you can eat them for breakfast with your favorite toppings, they can be made into a meat pancake cake or eaten as a snack with fruits or whipped cream, your choice! This time, however, I prepared pancake which is light and spongy that just simply melt in your mouth 🙂
Ingredients:
2 large eggs
2 tablespoon whole milk
¼ teaspoon vanilla extract
30 g flour
½ teaspoon baking powder
1 ½ tablespoon sugar
1 tablespoon oil
Procedure:
Seperate the egg whites and the egg yolks into two differents bowls. Add milk and vanilla extract into the egg yolks. Whisk. Sift-in the four and baking powder. Whisk until well combined (Do not over mix). Set aside. Beat the egg whites from low-high speed using an electric mixer. Slowly add the sugar and mix until became smooth and fluffy. Add the egg whites into the flour mixture and slowly whisk to combine. Heat a large pan over a medium heat. Brush with just a little amount of cooking oil. Pour in a ½ cup of batter into the pan (you may cook 3 pancakes at a time depending how big is you pan). Cover and cook for 5 minutes in each side or when the pancakes turned into nicely brown. Transfer into a plate. You may drizzle with maple syrup or sprinkle with powdered sugar 🙂
