A great soup for both cold and warmer days. Fresh vegetables, delicious Polish sausage together with the wonderful aroma of smoked paprika are a perfect combination, as if this soup was prepared in a cauldron over the fire. A simple and nutritious dinner for the whole family 🙂

Ingredients:

300 g kielbasa sausage, sliced into ½ inch
450 g cabbage, cored and chopped
400 g potato, halved
2 medium-sized carrots, chopped
2 garlic cloves, minced
1 red onion, chopped
½ teaspoon smoked paprika
4 cups chicken broth
2 tablespoons olive oil
1 tablespoon of fresh chopped parsley, for garnish

Procedure:

Heat the olive oil into a heavy bottom soup pot over medium heat. Add the sausage and cook, stirring occasionally for 5 minutes until lightly browned. Add in the onion and garlic and cook until the onion turns glassy. Add the carrots and potatoes, paprika, salt and pepper. Cook for 3-5 minutes stirring regularly. Pour in the broth and bring to a boil. Add in the cabbage and stir. Lower the heat and simmer for 15-20 minutes until the vegetables soften. Season with salt and pepper if desired. Serve with chopped parsley.
