Salmon Cherry Tomato Pasta
When I was in the Philippines, I was not convinced to mix pasta and tomato sauce with fish. In Poland, however, such a mixture is very popular, especially sardines in tomatoes. So I decided to prepare salmon this way and the dish is really delicious, and it is quick and extremely simple, I highly recommend it! 🙂
Ingredients:
200 g penne pasta, cooked according to the instructions on the package
300 g skinless salmon, cut into smaller pieces
400 g of tomato puree
4 fresh basil leaves, cut into smaller pieces
1 medium onion, diced
3 small garlic cloves, chopped
half a teaspoon of dried rosemary
10 cherry tomatoes, cut in halves
salt and pepper to taste
pinch of sugar
1 tablespoon of olive oil
40 g of grated Parmesan cheese
Procedure:
Heat the olive oil in a frying pan over medium heat. Add the onion and fry until glassy color. Add garlic and fry for a while. Pour all the tomato puree, add basil, rosemary, salt, pepper and sugar. Mix thoroughly and simmer for about 5 minutes, until the sauce is reduced. Add the salmon, reduce the heat and simmer for another 5-7 minutes, stirring gently occasionally. When the salmon is cooked, add the tomatoes and stew for about 3 minutes. Optionally, season with salt and pepper to taste. Serve with pasta and grated Parmesan cheese 🙂
