My kids really like carrot cake. When I was in Philippines I sometimes went to a one bakeshop and bought some of it. And since the Easter is coming, it also gives me an idea to make it. This recipe is simple and will be perfect for your Easter dessert. 🙂

Ingredients:
2 carrots
2 large eggs
1/3 cup granulated sugar
1/3 cup brown sugar
1/2 cup of vegetable oil
1 tsp vanilla extract
1 cup flour
1 tsp cinnamon powder
1/2 tsp baking powder

Frosting:
200 g soft butter
250 g cream cheese
1 cup powder sugar
1 tsp vanilla extract
pecan nuts for toppings

Procedure:

Grate the carrots and set aside. In a large bowl mix the eggs together with granulated and brown sugar, add the vegetable oil and vanilla extract and mix it until well combined. Sift in the flour, cinnamon powder and baking powder then fold it using a spatula. Add the grated carrots and fold until well combined. Transfer it in a baking pan with parchment paper in the bottom and bake for 40-45 minutes for 180ºC.

Frosting:
Mix together butter and cream cheese, slowly add powder sugar then add vanilla extract and mix.

When your cake is ready and not hot you can put the frosting anyhow you would like and put some pecan nuts on top.
