Pumpkin Soup with Garlic Croutons
Polish autumn is beautiful, sunny and a little bit cold. The leaves on the trees are golden which I admire most. This soup is perfect for cold days, and the golden pumpkin color perfectly highlights this autumn time. The perfect seasonal vegetable served as a soup with crispy, garlic croutons is a simple and delicious dish that warms up and fills the tummy 🙂
Ingredients:
460 g pumpkin or butternut squash, peeled cut into cubes
1 onion, sliced
2 garlic cloves, peeled
4 cups of broth vegetable or chicken stock
salt and pepper
2 tablespoons of cream 18%
sprigs of thyme, for garnish
garlic croutons, for toppings
Procedure:
Place the pumpkin, onion, garlic and broth in a pot. Cook uncovered over a medium heat for 10-12 minutes or until it boils and the vegetables are tender. Remove from the heat. Blend the vegetables using a stick blender until smooth. Season with salt and pepper. Pour in the cream and mix. Place the soup into bowls. Garnish with sprigs of thyme. Topped with garlic croutons
