Kadayif is a pastry dough made from filo strands used in cooking of many Middle Eastern desserts including knafe (traditional Middle Eastern dessert). It can be layered with nuts, cheese, meat and vegetables.

This recipe elevates the classic knafe with its crispy texture, creamy pistachios filling and decadent chocolate which create a delightful dessert that is perfect for a special occasion at home 🙂

Ingredients:

100 g Kadayif, about 1/4 package
2 tablespoon butter
1/2 cup pistachio spread
200 g chocolate of choice (i used milk chocolate and dark chocolate), chopped

Procedure:

Chop the kadayif pastry into 1/2 inch thick pieces, then place in a medium sized bowl. Heat the pan over medium heat. Melt the butter then add the shredded kadayif, fry for 10 minutes stirring every few minutes so that the kadayif toasts evenly, until golden brown. Place the toasted kadayif into a large bowl, add the pistachio spread and stir well to combine. Set aside. Melt the chopped chocolate in a double boiler. Stir to smooth out any pieces. Pour some melted chocolate onto the base of the chocolate moulder. Smooth out with a spatula until it forms an even layer. Place in the fridge to set for 5 minutes or until chocolate has hardened, then spoon all the pistachio kadayif mixture on top and spread to evenly cover the chocolate. Pour the remaining melted chocolate on top, smoothing out to cover evenly. Let it sit in the fridge for another 5-10 minutes. Once the chocolate has set, then it’s ready.
