Fresh Lumpia
In the Philippines, we have several types of lumpia (similar to spring rolls), but some are fried in oil. This dish contains with fresh ingredients with vegetables wrapped with homemade wrapper and with sweet garlicky sauce topped with crushed peanuts. A simple dish great for a nutritious snack, appetizer or a light dinner 🙂
Ingredients:
Filling:
250 g chicken,cut into cubes
30 g sausage, cut into small cubes
1 medium carrots, julienne
30 g green beans, thinly sliced
30 g chinese cabbage, thinly sliced
2 tbsp fresh parsley, chopped
2 cloves garlic, minced
1 onion, chopped
2 tbsp soy sauce
ground black pepper
¼ cup water
Wrapper:
1 cup flour
2 eggs
2 tbsp oil
1 ½ cup water
oil for frying
Sauce:
1 cloves garlic, minced
1 ½ tbsp soy sauce
3 tbsp brown sugar
1 ½ cup water
1 tbsp potato flour, dissolved in water
Additional ingredients:
lettuce
¼ cup crushed peanuts
Procedure:
Filling:
Prepare the filling by heating oil in a pan over a medium heat. Saute onion and garlic and cook until softened. Add chicken and fry until cooked. Add sausage, carrots and beans. Stir and cook for about 5 minutes. Add water and bring to boil. Add cabbage, stirring occasionally until vegetables became tender and water has absorbed. Season with soy sauce and ground black pepper. Remove from pan and drain well.
Wrapper:
Beat the eggs in a big mixing bowl. Pour-in the water and oil and mix it well. Add the flour and whisk together until all ingredients are well combined. Heat a frying pan over medium heat. Spray with cooking oil. Pour about ¼ cup of lumpia wrapper mixture into the pan. Turn pan from side to side to form an even circle. Continue to cook for 1-2 minutes or until the wrapper is cooked. Transfer in a plate. Repeat process until all the wrapper mixture is cooked. Set. aside.
Sauce:
Stir together the water, garlic, soy sauce, brown sugar in a small saucepan. Simmer over a medium heat and stir until sugar is dissolved. Dissolve the cornstarch in 2 tbsp of water. Add to the mixture. Cook over a low heat and stir continuously until thickened.
Lay a lumpia wrapper into a plate and place lettuce on top. Spoon about 2-3 tbsp of filling in the middle of the wrapper and fold both sides to cover the filling. Pour some sauce on top of lumpia and garnish with ground peanut and serve.
