Chocolate Cheesecake
Cheesecakes are one of my favorite desserts, so I enjoy experimenting with the ingredients for this snack. From classic cheesecake, through fruit cheesecakes, to the pumpkin version. This time I present to you a very sweet and very chocolate cheesecake, which will perfectly emphasize the taste of afternoon coffee or tea 🙂
Ingredients:
Crust:
1 cup ground graham crackers
½ cup of melted butter
1 tablespoons cocoa powder
1 tablespoon of granulated sugar
Filling:
130 g of hershey’s special dark chocolate (can be other chocolate)
250 g cream cheese, softened
1 ½ cup of granulated sugar
1 ½ tablespoons cocoa powder
2 teaspoons vanilla extract
2 large eggs
1 egg yolk
Ganache:
100 ml cream 30%
100 g hershey’s special dark chocolate, chopped
1 tablespoon cocoa powder
Chocolate Whipped Cream:
200 ml cream 30%
2 tablespoons of cocoa powder
1 teaspoon vanilla sugar
powder sugar to taste
Procedure:
For the crust, mix all the ingredients together. The mixture should look like wet sand and holds together. Transfer into a 8 inches round baking tin. Spread and press it evenly into the bottom using a spoon. Bake the crust at 180°C for 10 minutes. Remove from the oven and allow to cool. By this time prepare the filling. Melt the chocolate into a double boiler. Allow to cool. Beat the cream cheese and sugar into a mixing bowl until smooth. Add in the cooled melted chocolate , cocoa powder and vanilla extract. Mix scraping the sides. Add the eggs one at a time, beating after the next addition. Pour in the mixture over the crust and bake for 30 minutes. Reduce the heat to 150°C and bake for another 30 minutes. Turn off the oven and leave for an hour. Place into a cooling rack and allow to cool. Chill for 2 hours. Next prepare the ganache. Simmer the cream into a saucepan. Add chopped chocolates and cocoa powder. whisk until well blended. Allow to cool before pouring into the cheesecake. Chill for another 2 hours. Lastly, make the chocolate whipped cream. Combine all the ingredients into a metal bowl. Whip until stiff peaks start to form. This will take 4-5 minutes. Place the whipped cream into a piping bag and decorate the cake on top. Sprinkle with shaved chocolates 🙂
