Peanut Butter Chocolate Chunk Cookies
Christmas is coming so it is worth baking some delicious cookies! Almost any kind of cookie is delicious but this aromatic, crunchy, chewy cookie is our favorite! It is because it has a Christmas spirit sprinkled into it that it makes so yummy. Sharing with you this recipe that surely your family will love 🙂
Ingredients:
160 g of flour
½ flat teaspoon of baking powder
½ flat teaspoon of baking soda
pinch of salt
60 g butter, melted
105 g peanut butter
50 g granulated sugar
100 g light brown sugar
1 egg plus 1 egg yolk, in room temperature
1 teaspoon vanilla extract
150 g semi-sweet dark chocolate chunks, roughly chopped or chocolate chips
Procedure:
In a medium bowl, whisk together flour, baking powder, baking soda and salt and set aside. In another bowl, combine the melted butter and peanut butter. Stir in granulated sugar and brown sugar until well combined. Add the egg and yolk one at a time stirring well after each addition. Add in the vanilla extract. Gradually stir in the flour mixture. Stir in the chocolate chunks. Place the cookie dough into a plastic wrap and refrigerate for 2 hours. Allow the dough to sit at a room temperature to soften enough to scoop the dough. Preheat the oven to 190°C. Line baking sheets with parchment paper. Scoop the dough and arrange at least 2-3 inches apart into your prepared baking sheets. Slightly flatten each dough by palm. Dot some chocolate chunks on top. Bake for 10-12 minutes or until cookies begin to brown. Allow to cool for 5 minutes before transferring to a wire rack to cool completely (you can also store in an airtight container up to 1 week). Serve with your favorite milk 🙂
