Peach Cobbler
When it comes to fruit cakes, in Poland I most often find yeast cakes mixed with fruits. Cobbler, however, is a bit different because the fruit filling is covered by a layer of dough. I got this recipe from my Grandma and the dessert turned out to be brilliant, so I passed it on. Simple preparation, and this sweet delicacy will surely make every day more pleasant 🙂
Ingredients:
8 peaches, peeled, cored and sliced
2 tablespoon sugar plus ¾ cup
1 cup flour
1 teaspoon baking powder
1 teaspoon cinnamon
â…› teaspoon ground nutmeg
pinch of salt
½ cup butter, melted
1 teaspoon vanilla extract
Procedure:
Preheat the oven to 180°C. Lightly grease a round baking dish with butter. Place the sliced peaches into the baking dish and sprinkle with 2 tablespoons of sugar. Meanwhile, in a mixing bowl, whisk together the flour, ¾ cup of sugar, baking powder, cinnamon, nutmeg and salt. Pour in the melted butter and vanilla over the flour mixture and mix everything until well combined like a wet batter. Layer the butter on top of the peaches. Bake for 30-35 minutes or until the top becomes nicely brown and bubbly. Remove from the oven and let it cool for 15 minutes. Best to serve warm with vanilla ice cream 🙂
