Bitter melon is a vegetable with many healthy properties, especially for diabetics. In addition, bitter taste can perfectly balance sweet dishes to add some bitterness. Here I present an easy way to prepare bitter melon for breakfast or as an addition to various dishes.

Ingredients:

2 medium size ampalaya (bitter melon)
2 garlic cloves, minced
1 large tomato, chopped
3 large eggs, beaten
salt and pepper
2 tablespoon of olive oil, for frying

Procedure:

Wash the bitter melon and cut both ends. Cut into half vertically. Scoop the seeds out using spoons. Slice the bitter melon thinly and place into a colander. Sprinkle with a teaspoon of salt and mix using hand. Set aside for 5 minutes, allowing the salt removes the bitterness.
Rinse with water, squeeze and drain. After this time, heat the oil into a pan over a medium heat. When oil has enough heat, saute the garlic for about 2 minutes. Add the tomato and saute for 3 minutes or until wilted. Add in the bitter melon and saute until softened. Season with salt and pepper. Pour in the beaten egg and wait until the eggs start cooking before mixing. Serve with rice.
