Coffee semifreddo
People who know me personally know that I love coffee, but I like ice cream even more. Ice cream dessert can be prepared at home, all you need to do is collect a few easily available ingredients. Perfect dish for upcoming heat 🙂
Ingredients:
200 g 30% cream
25 g coffee beans
250 g mascarpone or cream cheese
7-10 savoiardi biscuits or ladyfinger biscuits
2 egg whites
100 g sugar
40 ml water
20 tsp espresso coffee
crushed dark chocolate
Procedure:
Crumble the coffee beans, add to the cream and set aside in the fridge for a few hours (preferably overnight). Squeeze with gauze or a meter diaper. In a saucepan, mix water and sugar and bring to a boil to make a syrup. Beat the egg whites and slowly add the hot syrup continuously while mixing until the mass cools down. Add mascarpone and mix again to a homogeneous mass. Whip coffee cream and add to the mass, gently mix the whole with a spatula. Pour the mass into the molder (i used rectangular shape) and put into the freezer for half an hour. After this time, pour each sponge cake with 2 teaspoons of coffee and put on the top of coffee cream mixture. Put the dessert back in the freezer for a few hours until it freezes. Take the dessert from the molder (here you have to fight a little, but with a knife you should succeed)and transfer to a that the sponge cake is the base of the desert. Sprinkle with crushed chocolate on top 🙂
