There are many cheesecake recipes, and most of them are made with cottage cheese. This time I decided to try to prepare the mascarpone cheesecake and to my surprise the taste of this cheesecake is perfectly delicious 🙂

Ingredients:

120 g biscuits petit beurre or graham crackers
60 g butter, melted
400 g mascarpone or cream cheese
120 g sugar
200 g sour cream
150 ml cream 30 %
2 eggs
2 tablespoon potato flour
1 ½ tablespoon vanilla extract
2 tablespoon of lemon juice

Procedure:

Crush the biscuits into food processor (or in a bag using a rolling pin) until they form into a fine crumbs. Pour in the melted butter and mix. The mixture should look like wet sand and holds together. Transfer into a round baking tin. Spread and press it evenly into the bottom using spoon. Grease with butter the inside of the baking tin and line with parchment paper. Cover with aluminum foil the outside. Set aside. Place the cream cheese and sugar into a big mixing bowl. Mix. Add sour cream. Mix. Add cream 30 %. Mix. Add eggs. Mix. Add potato flour. Mix. Add lemon juice. Mix. Pour in the mixture in prepared baking tin with crust. Place into the oven. Add water Bake 180 for 30 minutes. Reduce the heat to 150 an bake for another 30 minutes. Turn off the oven and leave for 1 hour. Place to a cooling rack and let it cool. Refrigerate for 6 hours or a night 🙂
