Chicken Stew With Vegetables and Rosemary
A simple dish to prepare, and the taste is incredible. Juicy chicken, delicious vegetables in aromatic sauce is a perfect mix for a successful family lunch. A simple dish that literally goes on its own and disappears from the plate very quickly 🙂
Ingredients:
2 chicken thighs
2 chicken drumstick
3 tablespoons butter
1 onion, chopped
2 garlic cloves, minced
2 medium-sized carrots, chopped
1 teaspoon flour
10-12 baby potatoes, halved
1 cup chicken broth
1 tablespoon tomato paste
few sprigs of rosemary
freshly ground pepper to taste
himalayan salt to taste
Procedure:
Wash the chicken thoroughly and dry with a paper towel. Sprinkle it with salt and pepper and rub. Melt half of the butter in a large pan on a medium heat. Add onion, garlic and carrots. Saute for 5-6 minutes. Add the flour and mix for a few minutes. Remove the vegetables from the pan and set aside. In the same pan, melt the remaining butter. Add the chicken and fry on each side until golden brown. Add in the cooked vegetables, chicken broth, tomato paste and potatoes. Cover and simmer for 20-25 minutes or until the chicken is cooked and the sauce has thickens. Season with salt and pepper 🙂
