Walnut Macaron with Custard filling

1 cup powder sugar
½ cups of walnut flour (peanut flour)
2 large eggs
¼ cups granulated sugar
½ cups milk
3 tbsp unsalted butter
food coloring
1 tsp vanilla extract
Procedure:
Sift-in into a bowl the powder sugar and walnut flour, mix together until well combined and set aside. In a large bowl put the egg whites (seperate the egg yolk for the filling) and mix into a low speed to high speed. Slowly add the granulated sugar and mix until it became foamy. Add food coloring (any color) and mix until you achieve the color you would like it to be. Add the flour mixture and fold it well using a rubber spatula to have a shiny and smooth texture. Put-in the mixture in a piping bag. In a baking sheet with a parchment paper, pipe-in the mixture vertically. Tap the tray for a few times to remove air bubbles and let it sit for 30 minutes until they are not longer wet. Heat the oven for 150 ºC and bake it for 15 minutes.
Filling:
In a small sauce pan put the egg yolk and slowly add the granulated sugar and mix well. Heat the sauce pan over medium heat and pour-in the milk together with butter and vanilla extract. Cook and stir until the mixture becomes thick.
Put the egg mixture in a piping bag and fill the macaron shells to make a sandwich.
