Vietnamese Fresh Spring Rolls
Cool and simple snack for lovers of seafood and rice noodles. Preparation should not cause anyone a problem, and the taste will make you happy to come back to this high-protein snack 🙂
Ingredients:
rice wrappers
1 bowl vermicelli noodles, cooked and cooled
15 small shrimps, peeled and cooked
fresh basil leaves
Sauce:
¼ cup of peanut butter
¼ cup warm water
1 tablespoon soy sauce
½ tablespoon vinegar
1 tablespoon brown sugar
Procedure:
Combine the sauce ingredients into a small bowl. Taste the sauce and adjust for desired taste. Mix and Set aside. Prepare all the ingredients in the table. In a bowl with a lukewarm water, soak the rice paper for 2 seconds and place in a plastic board. Place 3 shrimps on the center of the wrapper. Add 3-4 pieces of basil leaves. Place spoon of vermicelli noodles. Close both edges, press and roll to make sure that the filling are not loose. Place into a serving dish. Repeat process. Serve with peanut sauce.
