4 proteins, preferably at room temperature
200 g sugar
Beat the egg whites until stiff. Keep whisking at high speed, gradually add sugar. When the whites are well whipped and the sugar is melted, put the mixture into a pastry bag or a piping with a decorative tip. Squeeze meringues of any shape onto baking sheets lined with baking paper, leaving gaps between the meringues. Bake in a preheated oven at 70-80°C for about 1.5 hour or longer, until the meringues are well dried inside. After baking, slightly open the oven door and allow the meringues to cool. Store in an airtight container.
