Grilled Vegetable Skewers
We associate the grill mainly with meat, but it is also worth remembering about vegetables. Grilled vegetables are really delicious, healthy and are great both as a side dish or as a main dish. Simple marinade, easy to make that you only have to put the vegetables on the sticks, several minutes of grilling and the effect of delicious skewers guaranteed 🙂
Ingredients:
1 small sweet potato, cut into large cubes
1 eggplant, cut into large cubes
1 red pepper, cut into large cubes
1 orange pepper, cut into large cubes
1 red onion, cut into large cubes
3 pieces of diced pineapple
1 small zucchini, sliced
10 cherry tomatoes
2 tablespoons of olive oil
¼ teaspoon sweet paprika
¼ teaspoon garlic powder
pinch of salt
a pinch of pepper
the juice of one lemon
Preparation:
Prepare the marinade by mixing olive oil with sweet paprika, garlic powder, salt, pepper and lemon juice. Put the rest of the ingredients on skewers. Brush the vegetables with the marinade and transfer to the hot grill grate. Grill the skewers on each side for 6 minutes, changing them from time to time and spreading with marinade until the sweet potatoes are soft 🙂
